地处长江入海口东临黄海的启东市是全国最大的白米虾生态养殖之乡,独特的地理气候和水质环境,非常适宜白米虾的生长条件,当地出产的白米虾规格均匀,色泽通体透明,品质在全国是最优的,其甲壳较薄弱,肉质肥满细嫩,味道鲜美,蛋白质含量高,素称"海中燕窝",是上等的菜肴。
启东人又称青虾。

Steps to make 炝青虾(醉虾)

  • 1.把青虾用清水漂净。
  • 2.放冷开水浸泡,吃之前捞出,沥干水份。
  • 3.准备姜,蒜,八角,桂皮,花椒,葱,辣椒。
  • 4.加入盐,糖,黄酒,醋,老抽,鸡精,胡椒粉,搅拌均匀。
  • 5.把青虾摆入大盘。
  • 6.倒入炝料。
  • 7.放上葱花。
  • 8.在葱花上浇上热油。
  • 9.即可开吃!
