港式凤梨酥
台湾的凤梨酥很有名气,凤梨馅都是凤梨加冬瓜熬制的,味道不错。但自从我学会了港式的凤梨酥,就喜欢上了这个配方,自己做过多次,家人朋友都很喜欢,于是就发菜谱分享给大家。港式的凤梨酥馅料里面不放冬瓜,只用凤梨,果味更浓郁,面皮虽然也基本是曲奇配方,但里面加了杏仁粉,多了一层味道,吃起来口感更丰富。

  • 黄油150g
  • 冰糖粉50g
  • 蛋黄60g
  • 3g
  • 奶粉25g
  • 杏仁粉50g
  • 凤梨馅900g

Steps to make 港式凤梨酥

  • 1.杏仁用料理机的超细研磨功能磨碎,制成杏仁粉备用
  • 2.杏仁粉取需要的量,低筋粉取需要的量过筛备用
  • 3.把奶粉、低筋粉、杏仁粉倒一起拌均匀,也可以再过筛一遍
  • 4.黄油切丁软化,加入冰糖粉
  • 5.打蛋器低速搅拌蓬松
  • 6.分次加入蛋黄液再搅拌至蛋黄液完全吸收
  • 7.多次加蛋,全部加完后继续搅拌至黄油呈羽毛状
  • 8.加入混合好的粉类
  • 9.翻拌成面团,成团即可,不要过度揉,
  • 10.把面团分成18克的剂子
  • 11.做好的凤梨馅分成25克的剂子
  • 12.面剂压扁包入馅料
  • 13.用方形的模具成型
  • 14.用两个剂子做了一个小鸭的,来哄孩子玩,让凤梨酥也萌萌达
  • 15.全部做好放入烤盘
  • 16.烤箱180度预热后,入烤箱烤20分钟左右。晚上做的,厨房拍照颜色失真,嗨,想发菜谱还是得白天做啊。
