Steps to make 鱼香肉丝

  • 1.猪里脊、青椒、胡萝卜准备好;胡萝卜外皮中含有丰富的矿物质和胡萝卜素,如果外皮干净,尽量不刮掉,以保存营养。
  • 2.里脊肉是从冰箱里取出半化冻的,用刀先切片,再切丝,入碗中,放少许淀粉和料酒抓匀。
  • 3.青椒去蒂去籽,切细丝;胡萝卜先切片,再切细丝;刀切虽然费时费力,但口感会比擦丝器的好;这一步可以根据自己的刀功来决定用切还是擦。
  • 4.炒锅中倒少许油,油温热时将胡萝卜丝入锅中,翻炒1分钟,使胡萝卜丝均匀裹上油脂,利于将胡萝卜素转化为对眼睛有好处的维生素A。
  • 5.再将青椒丝倒锅中,翻炒几下变色;此时的胡萝卜丝和青椒丝都变色,且微微变软,盛出备用。
  • 6.同一锅中倒适量油,不要等油热,赶紧把肉丝和葱花同时倒入锅中,用铲子尖将肉丝快速打散,这样肉丝就不会坨在一起了,而是一根根独立分明。
  • 7.趁着肉丝打散,表面变色时,把豆瓣辣酱舀入锅中;豆瓣酱微辣而且很咸,所以用量随自己的喜欢来放,后面的酱油和盐也不要多放。
  • 8.快速将豆瓣酱与肉丝混合均匀。
  • 9.将先前炒好的胡萝卜青椒丝回锅。
  • 10.混合几下后,根据口味撒少许盐、1大勺白糖、少许酱油、沿着锅边淋适量米醋,快速翻炒均匀,出锅。
  • 11.鱼香肉丝万人迷,端上桌米饭都吃3碗!
