    Steps to make 日式照烧鸡

    • 1.不粘锅中直接放入鸡腿肉,然后开火(不粘锅不用油,只需要将鸡皮向下放在锅中即可,普通锅要先放油,油烧热后才可放入鸡腿肉)。
    • 2.让鸡皮中的油释放出,鸡肉变香鸡肉6分熟。
    • 3.放入日本清酒,冰糖,水麦芽,柴魚高汤(这几种调料搅拌在一起,同时下)。
    • 4.放入味醂和柴鱼酱油。
    • 5.微火拌抄鸡肉。
    • 6.不断拌抄至鸡肉全熟即可(关火即可,不需要拿出来)。
    • 7.蒸好的紫番薯取出。(紫番薯切块用蒸锅隔水蒸熟即可压成泥)
    • 8.放入保鲜膜中。
    • 9.手压成泥,也可以用擀面杖来压。
    • 10.然后捏住开口那端转圈做成球状,取芫荽叶或者芹菜叶,小薄荷叶等插入球中(看你当时有什么可用的蔬菜小叶装饰,按照时令自选)。
    • 11.黄番薯用同样的方法压成泥,然后做成球状(用味道很甜的红心番薯来做也很赞,味道和照烧鸡都很搭)。
    • 12.将球形黄番薯也加上叶子装饰。
    • 13.摆盘(整个摆盘过程就是将波菜汆烫捏成树状,加上红萝卜丁,将两个番薯球放在树前,照烧鸡肉上撒上白芝麻就完成了)。
