蒸大米粉蛋糕
大米粉也就是粘米粉,我用的是三象牌水磨粘米粉。大米粉蛋糕口感松软略偏干,没面粉做出来香和湿润。

  • 鸡蛋5个(带壳55g/个)
  • 牛奶70g
  • 玉米油20g
  • 60g
  • 柠檬汁或醋,1茶匙

Steps to make 蒸大米粉蛋糕

  • 1.做蛋糕前,先开火烧水,等面糊拌好,水也开了。牛奶和油拌至油水混合。
  • 2.放入蛋黄拌匀。
  • 3.倒入大米粉拌至无颗粒状。
  • 4.蛋白加糖用电动打蛋器打至干性发泡,提起打蛋头呈挺立的小尖。
  • 5.取1/3蛋白放入蛋黄糊里翻拌均匀。(不要打圈拌,容易消泡,从底部往上翻拌。)
  • 6.然后倒回剩余的2/3蛋白里翻拌均匀,拌好是浓稠轻盈的状态。(如果面糊稀稀的,那就是消泡了,蛋糕就不会成功了。)
  • 7.把面糊倒入8寸加高活底蛋糕模里,轻震几下,震出大气泡。(这方子也适合用6寸或7寸加高模,蒸出来会显高,我只有8寸的。)
  • 8.蒸锅铺上干净的布或毛巾(防止过多的蒸汽从底部进入。),把蛋糕放入。(蒸锅的水一定要预先烧开,开水下锅。)
  • 9.盖上碟子防止水份滴落在蛋糕上。(也可包上保鲜膜或锡箔纸。)
  • 10.盖上锅盖,蒸50分钟,关火焖5分钟。
  • 11.开盖取出。
  • 12.倒扣放凉。
  • 13.不塌陷不收腰。
  • 14.很松软。
  • 15.再来张。
