Steps to make 潜江风味油焖大虾

  • 1.将虾放在清水里漂洗,并用牙刷刷干净虾体。
  • 2.去泥筋,虾的尾部有三片尾翼,捏往中间一片,一拧一拉,泥筋就出来了。
  • 3.剪头,虾头越1/2处剪开(为了保留虾黄,可尽量少减些),注意不宜直接剪断,在欲断未断时往外一拉,将砂囊一起带出(那黑黑的一团物质,注意保留虾黄)。
  • 4.开背,从虾尾往头部剪开,这样更方便入味。
  • 5.锅上火倒油(250克),越8分热。依次倒入生姜片.大蒜瓣爆炒,再放豆瓣酱。白糖一起爆香。干辣椒,花椒(干辣椒和花椒根据个人喜好适量添加或减少不用),(如果您购买了易姐私房菜秘制酱料包yijie19562,生姜片+大蒜瓣+干辣椒+花椒+易姐秘制酱料70-80克一起爆香,后面的步骤不用再放其他任何佐料,没用完的酱料也可以做其他菜肴)。
  • 6.倒入虾子进行翻炒,虾壳微变色加入易姐香料包,盐,白酒,白醋,蚝油,继续大火翻炒。
  • 7.虾壳变成大红色,倒入啤酒,将虾略微淹没即可。加入十三香盖上锅盖,改中小火状态焖15分钟左右,期间每隔5分钟翻一次锅,使之入味均匀。
  • 8.汤汁快干时,用勺尝一下咸淡,淡了可以加盐,然后放入味精,鸡精,继续翻炒直至汤汁收干,投入葱白或者香菜盛出即可装盆。
