【梅州】客家黄粄
黄粄是广东岭东久负盛名的汉族传统小吃,属于粤菜系。黄粄的制作方法颇有讲究。首先要选上好的干柴草(如,干茶树枝、干稻草等),把这些干柴草烧成灰,并在灰中加入一些杨梅叶子(调色用)和少许生石灰(防止所做的黄粄吃后过冷)。然后,把草木灰用干净的布包好放在桶中用水淋,制成浸米用的草木灰水。同时,将约占三分之一的禾(哩)米(或糯米)和约占三分之二的籼米淘净后,放在草木灰水中浸泡数小时,然后把它加工成米浆。再将米浆倒在锅中用文火煮,注意在煮米浆中要不断搅拌,使水分蒸发而不致烧糊,从而制成柔软又富有韧性粄团,将粄团取出放在铜盆中,再把粄团蒸熟,然后将蒸好的粄团放在臼中舂上十几二十分钟。这样,黄灿灿、香嫩嫩的黄粄便制成。
简单的煎黄粄带出最清新的味道,粘上白糖和黑芝麻,味道好极了。

  • 5.待黄粄煎至两面金黄时,即可盛出。
  • 6.食用时趁热撒上白砂糖和芝麻。
