  • 1.准备好蛋糕坯的所有材料,蛋白、蛋黄分离至无水无油的干净盆中。
  • 2.蛋白分三次加入白糖打至硬性发泡。
  • 3.蛋黄中加入玉米油和牛奶,筛入低粉搅拌均匀。
  • 4.蛋白霜分三次加入蛋黄糊中切拌均匀。
  • 5.倒入模具中。
  • 6.烤箱160度预热10分钟,放入模具转140度于中下层上下火烤50分钟立即取出倒扣。
  • 7.放凉后手工脱模。
  • 8.分成两片。
  • 9.用花形慕斯模具压出花形蛋糕片于底部。
  • 10.鱼胶片放入凉水中泡软。
  • 11.白巧克力隔热水融化。
  • 12.倒入牛奶和鱼胶片隔热水搅拌至完全融化。
  • 13.放凉备用。
  • 14.淡奶油加入白糖打至稍微有纹路即可。
  • 15.倒入巧克力牛奶液。
  • 16.混合均匀。
  • 17.花朵模具包上锡纸,蛋糕片放在底部,倒入巧克力幕斯液于冰箱冷藏5小时以上定型。
  • 18.脱模。
