Steps to make 大肉包

  • 1.猪肉剁成末。
  • 2.加盐、鸡精、蚝油、老抽搅拌均匀,再分三次少量的加入葱姜水,顺一个方向搅拌上劲,最后加少许油,搅拌均匀,锁住水分。
  • 3.加入葱花,搅拌均匀,包子馅就好了。
  • 4.准备好面粉。
  • 5.酵母和糖加入温水中。
  • 6.搅拌均匀,静至5分钟。
  • 7.酵母水,加入面粉中。
  • 8.搅拌均匀。
  • 9.搅拌至有大面絮。
  • 10.加入5克猪油,搅拌均匀。
  • 11.下手揉成光滑的面团。
  • 12.不用醒发,直接切成均匀的8等分(现在天热,温度高,这里用了一次发酵法)。
  • 13.取出一个面剂子,擀成中间厚,边上薄的原面片(直径8~10cm左右)。
  • 14.放入肉馅。
  • 15.捏成包子形状。
  • 16.一个包子生胚就好了。
  • 17.依次全部做完,摆入蒸锅中,中间留出空隙,盖上锅盖,室温发酵至两倍大(40分钟左右),时间结束后,凉水上锅,大火烧开,出气后蒸15分钟,关火再虚蒸3分钟。
