芋泥米月饼
今年火爆全网的米月饼悄然而至,终于在周末自己熬制了糖浆,做了芋泥馅,蒸了米粉。网上大部分的米粉都是炒熟的,而我却用了蒸米粉,之所以用蒸的米粉首先考虑的是还原了米的清香,其次是蒸的米粉做出来的月饼要比炒出来的白。不得不说米月饼吃上一块米的清香、饼皮散酥的口感,奶香的芋泥馅,真是太好吃了,一连吃上几块都不腻哦,你一定要试试。
米月饼可以说是简单快手,没有难度,马上就中秋节了,来不及做广式月饼或者吃腻了广式月饼不妨试一试米月饼

Details of ingredients

  • 大米粉100g
  • 糯米粉100g
  • 糖浆65g
  • 熟玉米油30g
  • 凉开水65g
  • 蒸熟的香芋200g
  • 蒸熟的紫薯70g
  • 白砂糖30g
  • 淡奶油60g
  • 白砂糖100g
  • 120g
  • 柠檬汁几滴

Steps to make 芋泥米月饼

  • 1.先来熬糖浆:小锅里倒水烧开,倒入白砂糖,煮开后转小火,期间不要搅动,熬到水汽蒸发,液体粘稠,大概用时5分钟。
  • 2.剩余液体150g时滴入几滴柠檬汁,再煮开就可以了,关火晾凉,晾凉后变得透明。
  • 3.香芋和紫薯分别去皮切厚片,上锅蒸熟,蒸熟后晾凉,我一次蒸的多留作它用。
  • 4.在香芋和紫薯中+淡奶油+白糖,用工具捣烂成泥,翻拌均匀,冷藏备用。
  • 5.大米粉与糯米粉混合均匀后上锅蒸熟,蒸40分钟就可以了,蒸熟的大米粉晾凉,加入65g糖浆。
  • 6.再加入30g熟玉米油、65g熟开水,翻拌成絮状,和成团,冷藏静置1个小时备用。
  • 7.将面团分割成每个35g的面团,搓圆,芋泥馅也分成每个35g,搓圆。
  • 8.饼皮面团捏成小窝放入馅料,滚圆。还包了几个豆沙馅的,豆沙馅也是每个35g。
  • 9.虎口向上托住面团收口,滚圆。
  • 10.将包好馅的面团直接放入学厨75g月饼模具中,按压出花纹就可以了做好的月饼吃不了要放入冰箱冷藏,吃之前提前取出,3天之内吃完。
