【四川】牙签肉
牙签肉是地道的川味小吃,它外酥内嫩、酥香可口、色泽鲜艳,具有麻、辣、咸、甜等不同味道,非常适合不同人口味的需要,无论街头小吃摊,还是大饭店的正式餐桌,经常都可以看到它的身影;同时也是开胃、下酒及孩子们喜爱的小吃之一。
牙签肉可选用猪肉、鸡肉、羊肉的瘦肉部分来制作,我今天选用的猪瘦肉,口味上也比较接近川味,但看似能红,却不算辣,连孩子和老人都能接受的

  • 猪肉(瘦)380克
  • 芥花油400克
  • 生姜2克
  • 葱段3克
  • 蒜头3瓣
  • 蚝油1小勺
  • 白糖1小勺
  • 食盐2小勺
  • 淀粉4小勺
  • 孜然粉2小勺
  • 干辣椒8根

Steps to make 【四川】牙签肉

  • 1.准备相关食材(花椒忘加上)
  • 2.猪瘦肉洗净沥干
  • 3.切簿片
  • 4.放入碗中加入食盐、白糖、料酒、淀粉、蚝油、孜然粉,腌制20分钟以上
  • 5.趁腌制的时候准备好其实调料
  • 6.将肉片反复重叠数折用牙签串起
  • 7.炒锅加热倒入芥花油,油温8成热后丢入牙签肉
  • 8.依次放入小心溅油
  • 9.开中火炸至两面焦黄关火
  • 10.拣出沥油
  • 11.锅中留少许底油放入花椒、干辣椒和一半的葱、姜、蒜沫爆香
  • 12.随后放入牙签肉翻炒均匀,约1~2分钟
  • 13.倒入剩余的葱、姜、蒜沫炒香关火
  • 14.快点趁热食用哟
