    Steps to make 五香熏鱼

    • 1.准备材料
    • 2.鲅鱼冻结实,取出后略回温用刀切成薄片
    • 3.加适量料酒和生抽,放葱姜片腌制约30分钟
    • 4.生抽、糖、醋和盐,加入适量水调成酱汁,将八角、花椒粒和酱汁一同放到锅中煮开
    • 5.将煮开的酱汁晾凉,将腌好的鲅鱼用厨房用纸吸净水分
    • 6.锅中放油,至7成热时,放入鲅鱼片炸制
    • 7.至肉质收紧,微黄捞出沥油
    • 8.将油中的水分焅干,没有响声时再次放入鲅鱼片复炸一遍
    • 9.炸至表面发干,金红色时捞出沥油
    • 10.趁热放入晾凉的酱汁中,至少腌制1小时后食用
