Steps to make 老坛酸菜黄花鱼

  • 1.黄花鱼抛去腹中杂物,鱼鳃,黑膜,鱼鳞(可用一小块白萝卜逆鱼鳞来刮,还可起到去鱼腥作用),处理干净。在鱼背划一刀,倒入料酒,少许盐,姜丝,腌制半小时。
  • 2.准备配料,姜丝,蒜末,红椒,酸菜切丝。
  • 3.热锅冷油,油温7成热时,放入蒜末,干红椒炒出香味,再放入姜丝,酸菜,料酒,进行翻炒。
  • 4.加入开水,盐,味精,鸡精,胡椒粉。
  • 5.把鱼放入盘中,浇上酸菜汁,上蒸锅蒸5分钟。(或将鱼加入炒酸菜的锅中来炖)
