炒苜蓿肉
苜蓿肉是一道经典小炒,有肉有蛋有干菜有鲜菜,从营养上说非常全面,从口感上讲也是一道超级下饭菜。

  • 黑木耳1把
  • 黄瓜1根
  • 胡萝卜半根
  • 淀粉少许
  • 姜末少许

Steps to make 炒苜蓿肉

  • 1.主材准备好:干黄花菜和黑木耳提前用温水泡软;里脊切薄片;黄瓜胡萝卜洗净。
  • 2.里脊肉中放少许淀粉,抓匀备用。
  • 3.泡好的黄花菜切两截。
  • 4.黑木耳焯水。
  • 5.大葱切末,姜切末。
  • 6.炒锅中倒油,油温到7、8成热时,将打散的鸡蛋液倒锅里,稍微定型后用铲子打散成大块,再将葱花和姜末倒入锅中翻炒几下,激发出香味;鸡蛋盛出备用。
  • 7.同锅再倒适量油,锅是热的,油是凉的,赶快把肉片倒入锅中,用铲子迅速划散,稍变色后倒入适量酱油。
  • 8.把干黄花菜和黑木耳倒入锅中,这两种干菜比较能吃油,先炒一下可以将肉汁油脂吸收进来。吃起来更香润。
  • 9.把不爱熟的胡萝卜片倒锅里翻炒半分钟。
  • 10.最后将黄瓜片和炒好的鸡蛋块倒入锅中,根据口味撒盐,翻炒均匀,出锅。
  • 11.超下饭的苜蓿肉,有颜有味!
