荷花酥
荷花酥是浙江杭州著名的传统小吃。酥层清晰,食之酥松香甜,别有风味。“出淤泥而不染”是人们对荷花高雅洁丽品质的赞誉,用油酥面制成的荷花酥,形似荷花,酥层清晰,观之形美动人,食之酥松香甜,别有风味,是宴席上常用的一种花式中点,给人以美的享受。

Steps to make 荷花酥

  • 1.油皮:中筋面粉150克,玉米油50克,糖15克,水40克混合均匀揉成团
  • 2.分出一半加入1克左右的红曲粉揉匀,全部盖上保鲜膜静置20分钟
  • 3.油酥;中筋面粉100克,加入玉米油50克搅拌均匀
  • 4.混合好的面团静置20分钟
  • 5.把醒好的油皮各分成10等份,油酥平均分成20等份,盖上保鲜膜
  • 6.250克豆沙馅儿平均分成10份放冰箱备用
  • 7.取一块油皮滚圆压扁,包上一份油酥,用虎口处慢慢往上捏,包住油酥
  • 8.封口朝下
  • 9.用擀面杖擀成牛舌状,从上往下卷起
  • 10.全部做好,盖上保鲜膜松弛10分钟
  • 11.再取出一块面团竖放,擀长、从上往下卷起
  • 12.如此全部做好静置10分钟
  • 13.取一个面团,两头往中间捏
  • 14.压扁,擀圆
  • 15.取一块白色面皮上面放上一块红色面皮叠加整齐,放上豆沙馅儿,用虎口处慢慢往上捏,也可以红色面皮在外面、放上白面皮再放上豆沙馅儿,如此全部做好,封口
  • 16.封口朝下
  • 17.先用锋利的小刀在中间划上一刀,切开皮层
  • 18.然后再对半划开成米字形,稍稍整形
  • 19.全部做好放入铺上锡纸的烤盘
  • 20.放入预热好的烤箱上下火160度中层40分钟左右,中途要多观察上色情况,不能上色太深会影响美观,上色满意后可以加盖锡纸
