小天鹅之舞——零失败天鹅泡芙
因为昨晚分享早餐心得,所以做好的泡芙只能一直在烤网上放凉,上完课以后先是简单拍了几张照片,然后洗碗洗漱,就比较晚了。大概睡得时间不足4小时的样子,好在早上并未头痛。希望这种好状态经过午休后可以保持。
今天要分享的是天鹅泡芙。泡芙是一种源自意大利的甜食,膨松内空的奶油面皮包裹着奶油、巧克力乃至冰淇淋,口感酥脆润滑。

Steps to make 小天鹅之舞——零失败天鹅泡芙

  • 1.你需要准备:水:125g,黄油:52g,新良原味面包粉:62g;鸡蛋:2个,盐:0.5g
  • 2.黄油室温软化,和盐一起加入水中
  • 3.置于火上加热融化
  • 4.两枚鸡蛋打散备用
  • 5.黄油化开无小颗粒后加入面包粉快速搅拌均匀,至面粉全部烫熟
  • 6.面糊室温放凉后分次加入鸡蛋液,和面糊充分混合均匀
  • 7. 每一次加入蛋液,都搅拌到面糊和蛋液充分混合
  • 8.直到面糊的稠度从打蛋器上滑落时形成倒三角形
  • 9.将面糊装入一次性裱花袋,剪开一个0.5cm左右的小口,不装裱花嘴,挤出天鹅头的形状
  • 10.硅胶裱花袋装入一个8齿的花型曲奇裱花嘴,挤出天鹅身体的形状
  • 11. 200℃预热烤箱,上下火,中层,天鹅头约烤10分钟,天鹅身子约烤20分钟
  • 12.用小刀将天鹅身体切开,不要切到底,或者将天鹅从底部1/3处切开,上部再用刀子分成两半
  • 13.用裱花袋装入酸奶或果酱、淡奶油等内馅,再装上天鹅头即可,或者是,挤入内馅,再插上翅膀,装上天鹅头,最后可以用巧克力酱点上眼睛
  • 14.成品图 :鹅鹅鹅,曲项向天歌
