手撕油饼
油饼是我国面食的一种常见做法,今早煮了粥,又烙两张饼,烙饼用普通面粉即可,但家里只有高筋面与低筋面了,将两种面混合(低粉适量多些),烙出的油饼同样柔软,且层次分明、外酥里软的口感。

Steps to make 手撕油饼

  • 1.面粉适量(因没有普通面粉了,用高筋粉与低筋粉混匀),用热水烫1/2,再加少量凉水和成面团稍饧,擀成长方型片状。
  • 2.再刷上适量的油酥(为了防止面板沾油,把案板擦得很干净直接做吧)这油是纯榨油很浓很黄也很香呢。
  • 3.再用刀将面皮划成小细条状,烙出的一撕成丝状。
  • 4.从一侧轻轻的卷起。
  • 5.卷起后轻轻的就拉长了。
  • 6.将其分成2个剂子,将剂子按扁。
  • 7.每个剂子都从一侧卷起,再竖起来。
  • 8.用擀面杖压几下,再扣上个盆饧一会。
  • 9.将饼剂擀好。
  • 10.锅中放适量的油,放入饼坯烙制。
  • 11.翻面继续烙至金黄色取出。
  • 12.烙好油饼可清晰看到层层叠叠的层次。
  • 13.将烙好的饼轻松手撕成丝状,外酥里软、非常好吃。
