新疆的大盘鸡可以说家喻户晓 ,就连内地的人都知道,好多内地的人来了新疆都会尝尝新疆的大盘鸡的味道。等大盘鸡一上来,真的把内地人震住了,那盘子真的太大了,2-3 人是吃不完那大盘鸡的。更别说还要了大盘鸡一起吃的皮带面。所以你点菜时,服务生看你人少,一般都会提醒你要大盘还是小盘的,有位内地来的游客2人就点了大份的大盘鸡,服务生都提醒过,可人家就想吃大盘鸡,说是饿了,结果大盘鸡端上来,都不说话了,怎么吃也没吃完,哈哈,后来还在网上特意发了网帖,特意提醒来新疆的游客一定要小盘的大盘鸡,那大盘的大盘鸡实在是太大了。可见新疆的大盘鸡分量是多么的足。现在大盘鸡发展了很多新品种,大盘鸡焖花卷,馕包大盘鸡等等,都是大盘鸡演化而来的。也是结合新疆特有的食材和风味推陈出新的。

新疆人爱吃大盘鸡,逢年过节那是必须做的,这馕包大盘鸡做过年的大菜很不错的,既可以做菜,还可以做主食,饭菜都有了。

馕,在新疆的历史悠久,古代称为“胡饼”、“炉饼”。馕以面粉为主要原料,多为发酵的面,但不放碱而放少许盐。馕的花样也很多,所用的原料也很丰富。馕的功效:祛脂降压,护心,通便,补充能量,抑癌抗瘤,抗衰抗辐射。

    Steps to make 馕包大盘鸡—新疆味道

    • 1.材料:三黄鸡 土豆 干红辣椒 青辣椒 八角 花椒 胡椒 草果 盐 大葱 姜 料酒 白糖 大蒜 桂皮 西红柿酱 馕
    • 2.三黄鸡洗净(我爱用三黄鸡),切成小块
    • 3.土豆去皮切成块
    • 4.大葱切成段,大蒜去皮,姜切片
    • 5.干红辣椒用凉水泡软,青辣椒切块
    • 6.热锅凉油,烧至5成热时放白糖,白糖炒的起咖啡色的泡了,放进鸡块,翻炒均匀,
    • 7.加入干红辣椒八角 花椒粒 胡椒粒 草果 姜 大蒜 料酒 桂皮
    • 8.继续翻炒均匀,到鸡块有香味儿了成金黄色时,加盐炒均匀,加水至淹没鸡块,大火烧开,加盖中小火煮十几分钟左右
    • 9.加土豆煮至自己喜欢的软硬时
    • 10.加入切好的葱段青辣椒尝味
    • 11.加馕盖住鸡块,煮2分钟左右,捞起馕,切三角形的块,摆在盘子一圈,把鸡块捞起倒在馕的上面,
    • 12.汤汁加西红柿酱拌均匀稍微煮一下,出锅把汤汁倒在鸡块和馕的上面即可
