Steps to make Yuzi Shrimp

  • Firstly, we need to prepare the ingredients needed to make this jade shrimp dish: Jade tofu, also known as Japanese tofu, is a packaged tender tofu that is easily available in supermarkets or markets. It is inexpensive, has a light yellow color, and a delicate taste. You can buy vacuum packaged frozen shrimp, or you can buy fresh shrimp and peel it yourself for later use. Peas are not difficult to buy fresh in winter markets for color matching. Decorated on top of shrimp tofu, this dish is a combination of goose yellow, new green, and shrimp red, with a bright color and unique design. Serving it on the table is very pleasing to the eye and appetizing.
  • 2. Rinse the outer packaging of Yuzi tofu with water, place it on the cutting board, cut it in the middle with a knife, divide it into two sections, and then lift the packaging bags at both ends. With a gentle squeeze, the soft and tender Yuzi tofu slides completely onto the cutting board, cutting it into thick, round pieces in the shape of wheels. Because the texture of Japanese tofu is very delicate, it is important to use it gently to prevent it from breaking.
  • 3. Take a clean plate, carefully pick up the cut Yuzi tofu round pieces, and evenly place them on the plate. Place a shrimp on top of each tofu round piece, so plan the quantity you want to make in advance before placing the plate. If the quantity is uncertain, you can refer to the number of people at home or the size of the plate.
  • 4. When the tofu is ready, the fresh shrimp can be processed: remove the head and skin of the shrimp, and then pick out the fishy line. Because this dish is a Kwai dish, in order to make the shrimp cooked faster and more delicious, you can cut a part of the shrimp back. Then clean the peas and set them aside. Try to choose small particles of peas as much as possible, so as not to make them too large and incompatible with the shrimp.
  • If the shrimp is too large, you can cut off a portion of the meat that is thick and leave only the shrimp tail that is equal in size to the round pieces of Yuzi tofu for later use. Place the shrimp tail evenly on top of the sliced Yuzi tofu round pieces, and after placing the shrimp, place one green pea each. The initial shape of the Yuzi shrimp is completed.
  • 6. Add an appropriate amount of water to the steamer, put the plate of jade shrimp into the steamer, and steam over high heat for 5 minutes. Because Yuzi tofu is relatively smooth, when steaming in the pot, make sure to keep the plate level and stable to prevent the tofu and shrimp from shifting and affecting the overall shape of the dish.
  • 7. Shrimp and tofu are tender and easy to cook, and peas are also the smallest choice, so steam them in a pot for 5 minutes and they will be fully cooked. Steaming them for too long will affect the taste of tofu and shrimp. After turning off the heat and letting it stand for two minutes, remove the lid of the pot. The shrimp have turned red, and the peas have turned dark green after steaming. After steaming the Yuzi tofu, a portion of the soup will come out. If this soup is poured out, it will be wasted. It will be useful for the next step.
  • 8. Pour the water steamed from the jade shrimp into a frying pan. If the water is not enough, add some drinking water in moderation. Bring the water to a boil over medium heat, then use a small bowl with a small amount of water to melt the starch and mix well. Add a little salt and light soy sauce to season, forming a thin sauce. Turn off the heat.
  • 9. Finally, pour the prepared sauce evenly onto the steamed shrimp with a small spoon, and pour a little sesame oil according to personal taste to enhance the flavor. The finished product of this dish has a fresh color, with tofu, shrimp, peas, and classic red, green, and yellow colors.
