小山布丁
很早以前就做过布丁,不过只是加了牛奶,我觉得好难吃啊!最近看到了小山布丁,因为加了淡奶油,味道真是超级棒!

  • 焦糖液:砂糖80克
  • 冷水25克
  • 热水25克
  • 布丁液:牛奶400克
  • 香草荚1/4支
  • 淡奶油140克
  • 蛋黄48克
  • 全蛋液24克
  • 砂糖40克

Steps to make 小山布丁

  • 1.先做焦糖:将砂糖80克和冷水25克放入锅中,开小火。煮至琥珀色。
  • 2.加入热水25克搅拌均匀。(这一步要小心哦!)
  • 3.将焦糖倒入布丁瓶中。
  • 4.蛋黄48克,全蛋液24克和砂糖40克放入碗中,搅拌均匀。
  • 5.牛奶400克和香草荚翻入锅中,煮至即将沸腾,关火闷5分钟左右,让香草荚的味道充分散发出来。
  • 6.将淡奶油140克倒入牛奶中。
  • 7.再次加热,煮至80度左右。
  • 8.将奶液慢慢倒入蛋液中,搅拌均匀。
  • 9.将布丁液过筛一或两遍。
  • 10.将布丁液倒入装有焦糖的布丁瓶中。
  • 11.烤盘中倒入适量热水,将布丁瓶放入烤盘中。
  • 12.烤箱预热,150度,上下火,中下层,烤60分钟左右。
  • 13.烤好的布丁。冷藏后更好吃。
