Steps to make 肉末酸豇豆

  • 1.新鲜豇豆1把,清洗干净,沥干水分备用
  • 2.锅中加入适量清水,放入干红辣椒、花椒、八角、适量盐煮开,凉冷。
  • 3.将缸豆切小丁放置无水无油的玻璃碗中,加入凉冷的开水,加入1小勺白酒,盖好盒盖。
  • 4.腌制豇豆变色,有酸味。
  • 5.将酸豇豆捞出,挤干水分,备用。
  • 6.豆瓣酱切碎,大蒜切末,香葱切碎,调好味道的肉沫半碗。
  • 7.炒锅烧热放入色拉油,油热放入肉沫,翻炒均匀。
  • 8.炒至肉沫变色,放入豆瓣酱,小火翻炒。
  • 9.炒至豆瓣酱香味飘出,红油析出,放入酸豇豆翻炒均匀。
  • 10.放入大蒜末、香葱碎翻炒均匀。
  • 11.炒好的肉沫酸豇豆。
