德普烤箱食谱—巧克力慕斯

巧克力蛋糕底用料:鸡蛋2个、低粉40克、可可粉7g、植物油30克、牛奶30克、细糖25g、白醋少许

白巧克力慕斯糊原料:牛奶40g、淡奶油240g、蛋黄1个、细糖10g、 白巧克力块170g、鱼胶片2片、香草精少许

黑巧克力慕斯糊原料:蛋黄3个、水54g、糖54、鱼胶2个、黑巧克力块170g、淡奶油250g

淋面部分的原料:鱼胶片1片、淡奶油70g、黑巧克力70g、

Steps to make 德普烤箱食谱—巧克力慕斯

  • 1.先将蛋清和蛋白分开备用;
  • 2.将植物油和牛奶倒在一起搅拌均匀;
  • 3.加入蛋黄混合均匀,最后筛入面粉和可可粉,搅拌至无干粉;
  • 4.将蛋白和数滴白醋一起混合均匀
  • 5.白糖分三次加入,搅打至硬性发泡;与蛋黄部分混合均匀后倒入模具中;
  • 6.焙烤档180度烤制13min,取出置凉,除去表皮;再次铺在模具中;
  • 7.将40g的淡奶油、牛奶、蛋黄、细糖隔水加热,混合均匀 ;
  • 8.白巧克力放入盆中,倒入奶糊,隔水加热至巧克力融化;
  • 9.鱼胶片凉水泡软后隔水加热成液态,倒入白巧克力糊中,混合加入香草精,搅拌均匀
  • 10.将淡奶油打发,与巧克力奶糊混合均匀,倒入模具中,刮平,冷藏20min;
  • 11.做黑巧克力慕斯部分将蛋黄、水、糖、加热并混合均匀,
  • 12.熬好的蛋糊倒入黑巧克力块中,隔水加热至巧克力融化;
  • 13.鱼胶片冷水泡软后隔水加热至液态,倒入巧克力糊中,搅拌均匀;
  • 14.将淡奶油打发,与黑巧克力面糊混合均匀
  • 15.倒至已经凝固的白巧克力面糊上,继续冷藏20min
  • 16.冷藏间隙来制作淋面部分:先将鱼胶片凉水泡软后备用;
  • 17.牛奶和巧克力隔水加热至巧克力融化并搅拌均匀,鱼胶片隔水加热成液态后加入,
  • 18.待慕斯面糊凝固后倒在表面上,晃动模具使之均匀;
  • 19.4、再将做好的慕斯放入冰箱中,冷藏10min即可
  • 20.好吃~层次丰富。
