奶油霜戚风蛋糕
奶油霜没有那么甜那么油腻!也没有那么容易融化,比较适合夏天吃!

  • 蔓越莓3汤匙
  • 低筋粉120
  • 鸡蛋5个
  • 砂糖100克
  • 玉米油80克
  • 牛奶30克

Steps to make 奶油霜戚风蛋糕

  • 1.蔓越莓切细备用
  • 2.牛奶、玉米油、三十克的糖一起拌匀乳化
  • 3.在乳化好的糖水里筛入低筋粉,蔓越莓一起倒入拌匀
  • 4.拌匀后打人蛋黄五个,之字拌匀
  • 5.拌匀后的蛋黄糊(这个是后蛋发、这样糖乳化比较均匀)
  • 6.蛋白加糖七十克打至干性发(可以一次性加入糖,也可以分三次)
  • 7.取三分一蛋白和蛋黄糊拌匀
  • 8.拌匀后倒入剩下的蛋白继续拌匀、由下往上拌匀,不要消泡
  • 9.拌匀好的糊倒入磨具里轻轻磕几下把里面的空气磕出来,
  • 10.烤箱上下火150。中层烤六十分钟(根据自己的烤箱调节)
  • 11.出烤箱第一件事就是把蛋糕那在里地面十厘米的距离摔下去摔三次左右你会发现原本吐出来的那部分随着一次一次的摔平了!一般摔第四次就没反应了!然后倒扣冷却后、徒手过敏、不要用刀具脱磨!徒手脱比较自然美观
