  • 红曲粉一小匙
  • 淡奶油100克
  • 细砂糖10克

Steps to make 红丝绒果酱蛋糕卷

  • 1.黄油切小块和15克牛奶放在电磁炉上小火煮开,关火
  • 2.立即加入过筛好的低筋面粉,快速将面糊搅拌均匀
  • 3.加入剩下的牛奶拌匀
  • 4.一个全蛋加三个蛋黄分次加入到黄油面糊中,拌匀
  • 5.三个蛋白打入无油无水的碗里,分三次加入细砂糖打发至湿性发泡,提起打蛋器呈现小山角即可
  • 6.取三分之一的蛋白加入蛋黄糊中拌匀,再倒入剩余的蛋白面糊中拌匀
  • 7.取100克的面糊加入红曲粉拌匀上色,办好的面糊倒入原有的面糊中,稍微拌一下即可,不要拌太久,以免消泡和颜色全部混合无纹理
  • 8.面糊倒入铺有油纸的烤盘中,用刮刀抹平,轻轻震出多余的气泡,烤箱预热180度,上下火烤11分钟至有弹性便面上色即可,烤太久太干的话卷起来蛋糕会裂开
  • 9.将充分冷藏好的淡奶油加入细砂糖用电动打蛋器打发至8成左右,打发好的奶油加入适量的过奖拌均匀
  • 10.将蛋糕上色的一面向上,均匀的抹上奶油,边缘留少许不要涂抹,以免卷起蛋糕时奶油外露。
  • 11.轻轻卷起蛋糕卷,卷紧,密封,冷藏定型,再取出切块食用
