酸菜爽脆鱼肉嫩滑,自己在家也能做出饭店的味道(⊙o⊙)哦!

  • 花鲢300克
  • 酸菜一包
  • 蛋清一个
  • 五瓣
  • 泡椒十个
  • 花椒十五粒
  • 一小块
  • 五棵
  • 胡椒粉半茶匙
  • 料酒一茶匙
  • 四分之一茶匙
  • 鸡粉三分之一茶匙
  • 生粉半茶匙

Steps to make 酸菜鱼

  • 1.鱼段起去鱼大骨片成鱼片用清水浸泡五分钟
  • 2.鱼片控干水份用厨房纸吸干多余的水份,加入四分之一茶匙盐,一茶匙料酒,半茶匙胡椒粉,半茶匙生粉,蛋清
  • 3.朝顺时针方向拌匀(力道不要太大以免把鱼肉弄散)腌制十五分钟
  • 4.酸菜切丝用清水浸泡,姜,蒜,泡椒切碎备用
  • 5.起油锅倒入适量的油烧至五成热下花椒,蒜末,姜末,泡椒一起煸炒
  • 6.加入酸菜翻炒两分钟加入一大碗开水
  • 7.大火烧开下鱼片
  • 8.煮两分钟左右加入三分之一茶匙鸡粉调味
  • 9.煮好的鱼片连汤汁一起倒入准备好的大碗里,撒上葱花和辣椒段备用
  • 10.起油锅倒入少许油烧至七成热
  • 11.将烧好的油均匀的浇在鱼片上即可
  • 12.成品
