炸小麻团
有个同事家婆婆是点心大师,她每次都跟我们炫耀她婆婆做的麻团有多好吃,然后也从来不带来给我们尝尝,有一天我跟她说,我也要学炸麻团,她很不屑的跟我说,你以为想炸就炸的啊,人家那是多少年的经验。我不信邪,想着一定要炸成功,于是一直琢磨要炸那图按,怕不熟,所以做了小麻团,第一次做的时候没掌握好火候,结果麻团没鼓起来,被她嘲笑了,今天不服气,又炸了一次,小心的控制火候,终于给我炸出来了,那一刻开心死了……

Steps to make 炸小麻团

  • 1.事先称好150g糯米粉。
  • 2.称45g白糖。
  • 3.白糖里加入105g开水。
  • 4.搅拌使白糖全部溶化。
  • 5.把白糖水倒入糯米粉里,然后用手揉成不干不湿的光滑面团。(水不要一次性全部倒下去,预留一部分,每种糯米粉的吸水量是不一样的。)
  • 6.分成15g左右的小剂子搓圆。
  • 7.搓圆的团子沾点水滚上芝麻,滚好芝麻后可以再用手搓一搓,让它更圆。(沾水是为了让芝麻不掉落。)
  • 8.锅里倒入多点油,烧至三成热,就是有油纹路出现就可以了!
  • 9.油三成热后放入芝麻小团子。用最小火加热,强调一下炸麻团油温一定不能高,所以全程用最小火即可!
  • 10.等油温差不多六成热,麻团浮起来以后用一个漏网勺不停的滚动团子,并轻轻按压团子,等团子鼓起来再按压,多按压几次,据说这是团子长大空心的关键。
  • 11.等到炸到麻团表面都变成金黄色就可以了,用漏勺捞出控干油即可装到盘子里。麻团趁热吃外酥内软,特别好吃。
  • 12.可爱的麻团,看了就喜欢!还可以在里面加豆沙馅什么的应该会更好吃。
