Steps to make 蒜蓉小龙虾

  • 1.首先是选择小龙虾,小龙虾分为青虾和红虾。青虾指小龙虾刚脱完壳颜色青白的虾。煮熟后红色较浅,略微发黄。青虾虾壳较软,有弹性。红虾指小龙虾脱壳后发育了一段时间 头部和尾部呈红色或深红色,煮熟后颜色依旧红艳。红虾虾壳较硬,弹性小。
  • 2.挑选好的小龙虾去头,去虾线,虾尾一共有三片,捏住最上面中间的一片,用拇指和食指抓住用力拉出泥肠即可。
  • 3.接下来清洗很重要,为了吃到干净放心的美食,虽然麻烦一点,但也不可忽略,每个虾都要用牙刷刷洗,特别是肚子,脚的部分很容易藏泥沙。
  • 4.清洗好的小龙虾用浓盐水浸泡半小时,可起到再次清洁和杀菌作用(备注:放冰箱泡,确保保鲜,因为是杀过的)。
  • 5.浸泡后再次清水冲洗沥水,100℃热油下锅煎炸两分钟左右,再次杀菌和杀灭寄生虫。
  • 6.炸好控油,锅里留少许油。
  • 7.然后将准备好的蒜蓉炒香,改小火依次加入耗油、鱼露、鲍鱼汁、白糖、酱油调拌均匀。
  • 8.放入虾。
  • 9.最后收汁起锅装盘 香菜点缀即可。
