自制鱼丸
魚丸汤味美鲜香,不油不腻、但其操作且有一定难度,魚泥太稠魚丸太干无弹性、魚泥太稀不易成形(容易散掉),只有调制洽到好处、魚丸才能够完整成型。

Steps to make 自制鱼丸

  • 1.魚肉适量,鸡蛋只用蛋清(蛋黄不用)、淀粉适量。
  • 2.将魚肉洗净切条状。
  • 3.切好的魚条。
  • 4.将姜切成末。
  • 5.加入魚条、料酒、盐、少许水、2个蛋清、食用油、姜末、白胡椒粉同打成魚泥。
  • 6.料理机打成魚泥。
  • 7.将打好的魚泥取出。
  • 8.放入适量淀粉顺一个方向搅拌均匀。
  • 9.魚泥准备好了。
  • 10.锅中将水烧温(不能太热)。
  • 11.左手将魚泥团手中从虎口处挤出圆,右手用勺子沾水将魚丸取出放入锅中。
  • 12.准备红椒粒,胡萝卜叶碎(家里暂无香菜)做为点缀之用。
  • 13.将魚丸慢慢汆熟撒入胡萝卜叶碎、红椒粒即可。
  • 14.魚丸洁白如玉,细腻鲜香。
