巧克力冰激凌蛋糕
说实话感觉这个蛋糕有难度,而且对生蛋黄又有一点排斥,一直不敢尝试,也看这个月即将结束,赶紧的把作业完成吧!家里没有君度力娇酒,就用自制的葡萄酒代替,真的吃的时候一点也感觉不到酒味,也没有蛋腥味。整个蛋糕没有特别冰的感觉,杏仁碎与奶油的融合挑战了整个味蕾,隐约中还带有一点点咖啡味,让喜欢咖啡的我更加喜欢了。

  • 蛋白3个
  • 杏仁碎130g
  • 绵白糖40g
  • 蛋黄3个
  • 绵白糖20g
  • 淡奶油300g
  • 黑巧克力100g
  • 自制葡萄酒10g
  • 咖啡3g

Steps to make 巧克力冰激凌蛋糕

  • 1.准备所需材料
  • 2.蛋白分三次加入40克细砂糖
  • 3.打至硬性发泡
  • 4.然后倒入的杏仁碎(我是买的现成的杏仁碎),然后翻拌均匀
  • 5.模具底铺上油纸,我是用活底模具的
  • 6.将拌好的杏仁蛋糕糊倒入模具里,再把蛋糕糊抹平。烤箱预热160度,放中层烤15-18分钟
  • 7.自制葡萄酒中放入咖啡至溶化备用
  • 8.黑巧克力切成小丁备用
  • 9.蛋黄加入20克细砂糖
  • 10.然后打发至有纹路
  • 11.再加入调好的葡萄酒咖啡
  • 12.再次打搅均匀
  • 13.将淡奶油打发至有纹路,倒入拌好的蛋黄糊,然后翻拌均匀
  • 14.加入巧克力丁,巧克力丁不要全部加入,要留出一部分放蛋糕表面装饰,然后翻拌均匀
  • 15.将拌好的冰激淋糊倒入烤好的杏仁蛋糕坯里(蛋糕坯要等到自然冷却,才能倒入冰激凌糊)
  • 16..然后用抹刀抹平表面
  • 17.再把剩余的巧克力丁,放在冰激淋蛋糕表面作为装饰,最后把冰激淋蛋糕放入冰箱冷冻一晚,食用时取出放置几分钟即可切块。
