Steps to make 花儿

  • 1.将除黄油以外的原料放在一起,揉至面团表面光滑,加入黄油揉至扩展阶段后,放温暖处进行基础发酵。
  • 2.基础发酵结束
  • 3.将面团排气后分割成5个60克/个、5个35克/个、1个25克/个和1个15克/个的面团,分别滚圆,将剩下的面团也滚圆,松弛15分钟。
  • 4.将大面团擀开,把8寸花形慕斯模放在擀开的面团上,用利刀切去多余的面团。
  • 5.将搓长的面条放在涂过油的慕斯模里,中心部分压扁,将25克的面团再次滚圆后放在中间,将整好形的面团放温暖湿润处进行最后发酵。
  • 6.最后发酵结束,表面刷蛋液,在花瓣处挤入奶酪馅。
  • 7.入预热180℃的烤箱,中下层,上下火,40分钟。出炉后立即脱模,移至烤网上放凉。
