Steps to make 酸辣炖鱼

  • 1.备好食材,买鱼时候可让老板随便帮忙去鳞去腮,宰杀好,回来就省事了。
  • 2.将草鱼里里外外洗净,用刀在鱼头和鱼尾部各划一刀;再用刀背轻轻拍打鱼身边拽出腥筋,会大大减少草鱼的腥味。
  • 3.然后在鱼身两侧多开几刀便于入味,用清水冲洗一遍并沥干水分。
  • 4.配菜洗净,葱切段,姜切片;爱吃鱼泡的,也洗净备用。
  • 5.炒锅烧热,倒食用油,下葱姜蒜,炒出香味后盛出;葱段留一半后面还有用。
  • 6.锅中留底油,放郫县豆瓣酱用小火炒出香味,炒出红油,再调入料酒去腥增香。
  • 7.放少许白糖合味提鲜,中和酱的咸味。
  • 8.放入生抽、老抽和香醋调色增味,再加入适量清水,大火烧开。
  • 9.然后把整条草鱼直接放入锅中,无需煎炸;再把之前煸好的葱姜蒜重新放回锅中。
  • 10.烧开后加盖转小火炖20分钟左右,将鱼泡和留下的葱段放入锅中。
  • 11.等鱼泡收缩后转大火,沿锅边再淋一圈香醋增加风味。
  • 12.最后分2次淋入淀粉水,待汤汁变浓稠后即可关火,汤汁不要收干,有些汤汁才好吃。
  • 13.盛入碗中,撒上香菜即可。
  • 14.汤鲜肉嫩,酸辣下饭,真的超好吃。
