宫保鸡丁是川菜中非常有代表性的菜,不同于大多数川菜的麻辣,而是微辣还略带点甜,适合大多数人的口味。我女儿就特别爱吃这道菜,当然我做这道菜的时候油量和糖量都减量了,因为家人都不喜欢油腻和甜的食物,微微加点糖,只是为了提鲜。
上次做的宫保鸡丁我女儿说太小不好夹,今天特地切得大一些,做好后,女儿觉得非常好吃,很下饭。

  • 炸花生米100克
  • 干花椒一小把
  • 大葱一段
  • 大蒜两瓣
  • 生姜一块
  • 料酒少许
  • 鸡精少许
  • 胡椒粉少许
  • 干辣椒12个

Steps to make 宫保鸡丁

  • 1.准备好原材料。
  • 2.干辣椒切成小段,抓一抓,去掉辣椒籽。
  • 3.大葱一部分切成薄片,另一部分和生姜、大蒜一起切成末。
  • 4.鸡肉切成小丁。
  • 5.鸡肉里加入少许料酒、胡椒粉、盐抓匀,然后加入适量玉米淀粉抓匀,然后加入适量香油再抓一下。
  • 6.碗里加入适量水,加入适量白糖、米醋、酱油、淀粉,少许鸡精、盐,调成碗汁。
  • 7.锅里加入油烧到七成热。
  • 8.加入鸡丁快速翻炒至熟,出锅待用。
  • 9.锅里留底油,加入花椒、干辣椒、葱姜蒜末炒香。
  • 10.加入炒好的鸡丁翻均匀。
  • 11.加入碗汁大火翻炒。
  • 12.加入炸花生米、大葱薄片,翻炒均匀。
  • 13.出锅了。
