干煸豆角
豆角是灿烂家餐桌上的常菜,老人们都叫它豆角子,角要读“jue”。小时候大伯种菜园,暑假回老家最喜欢的事情就是去菜园,想吃啥菜摘啥菜。嫩绿的小豆角细长细长的垂在架上,摘下一根,用手撸一撸尘灰,再拔一棵小葱,把豆角插在葱叶中,开吃,脆脆的口感,豆角的清香揽去了小葱的辛辣,真是棒极了。夏天,把豆角焯水,捣好蒜泥,倒麻酱,拌一盘光一盘~还有最喜欢的吃法就是干煸,将豆角表皮炸到起皱,再加肉丁一起翻炒,也是下饭的来。

  • 3.豆角洗净切段。

  • 6.油热后,将豆角炸至表面起皱,盛出。
  • 7.另起锅,热油,爆香葱姜末。
  • 8.倒入豆角翻炒,倒入味极鲜继续炒。
  • 9.倒少许醋拌匀,加盐调味,出锅装盘。
