青椒炒牛肉
【青椒炒牛肉】一道家常菜,牛肉和辣椒很搭的一队食材,辣椒,可以辟掉牛肉的肉臊味,而牛肉能令到辣椒带着肉味,更有亲切感。不过,身为广州人,接受辣的程度有限,辣椒用了维生素多多的青椒和彩椒,色彩迷人又营养丰富。
对于厨房新手来说,如何将牛肉炒得鲜嫩入味呢?分享一下我个人的做法,牛肉选择牛柳,纹路清晰的,牛肉要腌制入味,有人会用嫩肉粉或者小苏打粉,这样当然会嫩,但是自己做自己吃放添加剂,有点对不起自己吧,所以我腌制牛肉就是用水、酱油、油和玉米淀粉来腌制。最后炒牛肉时要注意油热再放入牛肉,这样炒牛肉能锁住牛肉内部的肉汁,炒出来的牛肉格外鲜嫩。

  • 沙茶酱10ML

Steps to make 青椒炒牛肉

  • 1.准备材料:牛肉切片,青椒和彩椒切菱形,洋葱切片,姜切丝。
  • 2.牛肉片放入少许水、料酒,盐、酱油、花生油和玉米淀粉,拌匀。
  • 3.炒锅里放入两勺花生油,烧热油后爆香姜丝。
  • 4.放入牛肉片爆炒几下。
  • 5.把牛肉片爆炒至转色时将牛肉片捞起。
  • 6.利用炒锅里的余油爆香洋葱丝。
  • 7.将洋葱爆出香味时加入青椒片和彩椒片,煸炒。
  • 8.当青椒和彩椒炒熟时加入牛肉片。
  • 9.加入1勺沙茶酱和少许盐,将调味料和食材融合。
  • 10.当所有材料炒好后即可盛碟享用了。
