以前工作忙时,总想着放个大假待在家里,
肆无忌惮地煲剧吃肉乐享美味,
那就趁现在来实现吧。

  • 花雕酒1勺
  • 生抽1勺
  • 老抽半勺
  • 少许
  • 黄冰糖1把
  • 沈郎乡山茶油少许

Steps to make 宅在家的日子,大口吃肉吧~

  • 1.100g鹌鹑蛋煮熟去壳,下油锅炸至颜色金黄,捞出备用。
  • 2.将500g五花肉切成2.5cm左右大的方块,入冷水锅焯水,捞出沥干备用。*选用肥瘦相间的五花肉口感更好。
  • 3.锅内小火倒入少许沈郎乡山茶油,切好的五花肉入油锅,煎至微焦后捞出。
  • 4.用同一个锅,小火,放一小把 黄冰糖 炒出糖色(黄冰糖要完全融化),立即倒入煎过的肉翻炒至上色。
  • 5.加1小把小葱段和4片姜,倒入1勺花雕酒、1勺生抽,半勺老抽,少许盐,加660ml啤酒。大火煮开后,再加入八角香叶等香料,加盖小火炖煮45分钟左右。*根据肉的软烂程度可适当加少许水,延长炖煮时间。
  • 6.开盖加入炸好的鹌鹑蛋,再煮5分钟,让蛋充分入味上色,将汤汁收至粘稠后出锅。
