肠粉
在广东比较容易买到肠粉专用粉,粉控的我叫我的家人从深圳发来了十几斤肠粉专用粉,够我家吃好几个月了。
以前还没有买到肠粉专用粉时,自已都是摸索着做肠粉,经过多次实验,用水磨粘米粉,高筋面粉洗面水调成糊,再蒸成粉,成功率较高,而且做出来的粉很白很筋道,口感也很嫩滑,但是比较麻烦。
现在有了肠粉专用粉一切都简单了,做一次肠粉只花半个小时即可吃到美味的肠粉。收到肠粉专用粉时,我还特定看了配料表,这肠粉专用粉也是用粘米粉和面粉调配而成的,哈哈,看来自已也有一定的研发能力哈。
看看这肠粉又白又嫩,裹着馅料,淋着酱汁,真的很美味。

  • 肉末80克
  • 韭菜100克
  • 鸡蛋2个

Steps to make 肠粉

  • 1.准备好材料
  • 2.用清水将肠粉专用粉调成糊,粉和水的比例为1:1
  • 3.锅中烧热,下打好的鸡蛋炒熟
  • 4.另起锅,烧热,下油下肉末炒出油至金黄色,加入盐,生抽,胡椒粉炒匀
  • 5.下切成粒的韭菜一起翻炒至八成熟
  • 6.下炒好的鸡蛋一起炒,加入少量盐,生抽炒匀即可起锅备用
  • 7.取一个平底的盘子,舀入调好的米糊(刚没过盘底即可),放入蒸锅中
  • 8.盖上盖子,水开后约三分钟即可拿出
  • 9.蒸好的粉放入凉开水中泡一会,揭下粉皮
  • 10.粉皮放大点的盘子中,加入刚炒好的馅
  • 11.卷起来即可成肠粉
  • 12.蘸汁用生抽,辣椒油调成,淋在肠粉上即可
