  • 猪里脊350克
  • 胡萝卜丝50克
  • 香菜段15克
  • 白醋2汤匙
  • 白糖1汤匙
  • 精盐2克
  • 生抽1汤匙
  • 老抽1/4汤匙
  • 料酒1/2汤匙
  • 味精1克
  • 香油1/4汤匙
  • 土豆淀粉75克

Steps to make 锅包肉

  • 1.原料图。
  • 2.将猪里脊肉顶丝切成0.2-0.3厘米的片;土豆淀粉提前用凉水浸泡透,沉淀后倒掉水,在调成稀糊状待用。
  • 3.将调好的水淀粉倒入盛里脊肉片的碗里。
  • 4.将调好的水淀粉倒入盛里脊肉片的碗里。
  • 5.反复用手抓匀,使淀粉均匀的裹在肉片上。
  • 6.锅坐火加宽油,烧至5-6成热时,将肉片一一下入锅里,炸定型时,翻动肉片,见有些发黄时捞出。
  • 7.捞出控净油装盘待用。
  • 8.兑碗汁:碗中放入精盐、料酒、白糖、白醋、生抽、老抽、香油、和一点点的水淀粉。
  • 9.给油锅加温,当油温升至7-8成热时,下入肉片复炸。
  • 10.另起一锅烧热,加入少量底油,下入姜丝、葱丝、胡萝卜丝炒香。
  • 11.捞入炸得金黄色的肉片放入锅里翻炒。
  • 12.烹入碗汁翻炒均匀,撒上香菜段出锅。
  • 13.装盘上桌开餐了!
