手抓猪蹄
用大料卤煮过的猪蹄,再回锅加生抽收干水份,加入自已喜欢的孜然粉,或辣椒粉,或椒盐,色香味俱全的手抓猪蹄就是这样做出来的。用手抓着吃,大块吃肉的节奏根本停不下来。

  • 八角1朵
  • 香叶2片
  • 草果1个
  • 花椒十几粒
  • 1小段
  • 干辣椒3个
  • 老抽2汤匙
  • 生抽4汤匙
  • 蚝油1汤匙
  • 料酒1汤匙
  • 蒜粒少量

Steps to make 手抓猪蹄

  • 1.准备好材料
  • 2.猪蹄放锅中,加入姜片,料酒后烧开水,将猪蹄焯水,去除血腥味
  • 3.焯过水的猪蹄放清水中清洗干净
  • 4.清洗干净的猪蹄放高压锅中,注入水,加入桂皮、八角、干辣椒、草果、香叶、花椒、老抽、生抽、蚝油、料酒、姜、盐,盖上盖,烧开后转小火再煮20分钟关火,稍凉后打开盖子,捞出猪蹄备用
  • 5.锅烧热,下油及蒜粒炒香
  • 6.下卤煮好的猪蹄,注入少时卤煮猪蹄的汤水,生抽,转大火收干汁水
  • 7.撒上孜然粉,炒匀即可起锅
