营养早餐——毛毛虫面包

Steps to make 营养早餐——毛毛虫面包

  • 1.这是面团材料
  • 2.油面材料
  • 3.将白糖、牛奶、水、鸡蛋混合放入搅拌桶,搅拌均匀
  • 4.加入低筋面粉、酵母搅拌,面粉完全吸收水份后,高速揉成面团
  • 5.揉至面团光滑时,加入黄油,继续揉至表面光滑,能拉出手套为止
  • 6.揉好的面团,静置15分钟
  • 7.将面团分割每个60克的小面团,揉滚成圆形,再松驰10分钟
  • 8.小面团用擀面杖擀成三角形的面片,从小的一端卷起,卷成长条
  • 9.把卷好的长面条再搓长些,摆放入烤盘进行发酵(烤箱底部放碗热水,不开发酵档了,现在气温高),约发酵1个小时,发酵至原体积的1.5倍大即可
  • 10.再来制作面油操作:将水、黄油放入锅中大火煮至沸腾
  • 11.转中火加入低筋面粉,用蛋抽快速搅拌,无粉粒,离火,煮好的面糊放凉,再分次加入鸡蛋搅拌均匀即可
  • 12.将拌好的面糊装入裱花袋,剪个小口,挤到发酵好的面包上即可
  • 13.放入预热好的烤箱烘烤,上火190度,下火150度,烤15分钟左右,面包表面金黄色即可
  • 14.出炉
