苏式鲜肉月饼
最近大家都在做月饼,预热中秋,今天咱也来跟跟风。先来做一款苏式鲜肉月饼。酥得掉渣渣。

  • 猪油60克
  • 温水100克
  • 细砂糖10克
  • 10克
  • 面粉200克

Steps to make 苏式鲜肉月饼

  • 1.把肥三瘦七的猪肉泥,葱,盐,花椒面,生抽,老抽,鸡蛋调匀按一个方向搅上劲,盖上保鲜膜放冰箱冷藏备用。肉馅变硬后才好包。
  • 2.把主料和配料分别揉成团。盖上保鲜膜醒30分钟。
  • 3.醒好的面团分别称重后各分成16等份。
  • 4.取一个水油皮包住油皮整成圆球形,然后按扁擀成牛舌状。
  • 5.从下至上卷起。
  • 6.全部卷起后盖上保鲜膜醒15分钟。
  • 7.醒好的面团继续擀长,如图所示。
  • 8.再卷起醒15分钟。
  • 9.把醒好的面团对折拗起来
  • 10.整成圆球形
  • 11.按扁擀成小饼。
  • 12.包上适量的肉馅,毛茬朝下,按扁摆烤盘内。
  • 13.烤箱180度预热后,中层,10分钟待底部定型后翻面再烤10分钟,然后再翻面烤5分钟左右即成。
