广式紫薯月饼
这次的饼皮,做的比上次的薄些,技术熟练的朋友,可以适当减一下饼皮的重量,皮薄的会更好吃,当然包起来,会难一些。

Steps to make 广式紫薯月饼

  • 1.饼皮原料备用。
  • 2.内馅原料备用。
  • 3.转化糖浆,枧水,食用油倒入大碗内混合。
  • 4.筛入低筋面粉。
  • 5.混合成均匀的面团,包上保鲜膜醒一小时。
  • 6.紫薯去皮后洗净,切片。
  • 7.放入蒸锅内,蒸熟。
  • 8.按成细腻的薯泥。
  • 9.放入不粘锅内,加入适量的黄油。
  • 10.炒去多余的水份,加入适量的白糖和澄粉。
  • 11.紫薯馅炒好后,分成27g的小球。
  • 12.醒好的面团分成18g一个小球。
  • 13.小球放在保鲜膜上,按成圆片(大小以包住豆沙馅即可。),放上紫薯馅。
  • 14.轻轻的收口,(面团的延展性非常的好,慢慢的推即可)然后入掌心揉圆。
  • 15.外皮裹少许低粉(防止粘在模具上)。
  • 16.小球放入模具内。
  • 17.倒扣在铺了油纸的烤盘内,轻轻的压(不要太用力),然后脱模。
  • 18.做好的月饼坯,整齐的排在烤盘内。
  • 19.烤箱预热200度,中层,20分钟。烤5分钟后,拿出刷上一层全蛋液。
  • 20.再继续烤15分钟,取出晾凉即可。(放一天,回油后,会更加漂亮)
