香醇浓郁---香草焦糖布丁

  • 布丁液:鸡蛋2个
  • 纯牛奶250毫升
  • 香草豆荚1/4根
  • 砂糖30克
  • 焦糖:砂糖75克
  • 清水25毫升
  • 热水20毫升

Steps to make 香醇浓郁---香草焦糖布丁

  • 1.将香草籽连同豆荚用刀削成碎末与砂糖调入牛奶锅中,用小火加热至微沸后离火,盖上盖子,焖5-8分钟。
  • 2.牛奶倒入蛋液中搅拌均匀。
  • 3.布丁液用筛网过滤杂质,使其口感更细滑。
  • 4.布丁模中涂抹黄油待用。
  • 5.将砂糖与冷水放入锅中,中大火熬至周围变黄后转小火,以保持受热均匀。(加热的过程中不需要搅拌)
  • 6.待糖水呈琥珀色,立刻关火并倒入刚热水,充分搅拌。
  • 7.焦糖液均匀的倒入模具待用。
  • 8.将布丁液倒入盛有焦糖液的模具中。
  • 9.布丁模放入烤盘,注入约布丁模2/3高的热水,烤箱预热160度,中层,烤制40分钟至布丁凝固。
  • 10.出炉置于室温下降温,冷却后入冰箱冷藏2小时以上。
  • 11.用小刀沿着杯壁轻轻划一圈,轻轻倒扣即可脱模。
