酱香浓郁的鸡蛋炸酱面
北京人爱吃的炸酱面有点儿太“隆重”,鸡蛋炸酱又快又鲜又嫩,是老百姓日常的快手小菜,用它拌面、拌饭、抹馒头、夹烙饼,简直太香了,还要那些拌饭酱干嘛啊!

鸡蛋的营养价值高,取材容易;黄豆酱和酱油也能在南北方的超市里轻松买到。现在大多数的黄豆酱都是稀的,无需像干酱那样澥开才能用,就把它当成酱油那么使用,即使你是头一次做鸡蛋酱,也能一准成功。

Steps to make 酱香浓郁的鸡蛋炸酱面

  • 1.鸡蛋和黄豆酱准备好。
  • 2.鸡蛋打入碗中,放一小勺凉水稀释,这样炒出来的鸡蛋蓬松;炒锅中倒适量油,油温4、5成热时,鸡蛋液倒入锅中,用筷子顺着一个方向轻轻搅动,随着温度的上升,鸡蛋液凝固,形成均匀的鸡蛋块;凝固后即出锅,保持鸡蛋的鲜嫩。
  • 3.倒适量酱油入锅,再舀3大勺黄豆酱。
  • 4.酱油和黄豆酱搅拌均匀,小火加热,待酱汁微微沸腾冒小泡,半火。
  • 5.鸡蛋块入锅,稍加混合即出锅,千万不要久煮,那样鸡蛋就又干又硬了,除非你喜欢那个口感。
  • 6.刚出锅的鸡蛋酱又香又嫩,忍不住舀了一勺吃了,太香了!
  • 7.另起锅烧水,水开后将挂面入锅。
  • 8.待面条无白芯时,撒一把洗净的油菜,焯烫变色和面条捞出,过凉水,面条水灵不坨。
  • 9.浇上鸡蛋酱,边吃边拌,超满足。
