Steps to make 醋烹鲈鱼

  • 1.鲈鱼去内脏去鳞清洗干净
  • 2..调料:生抽、香醋、料酒、葱姜、焯过水的青豆、葱姜蒜。
  • 3.收拾干净的鲈鱼以胸腹鳍处下刀,将鱼头切下,用刀略拍。从脊骨处用刀片开,另一边同样从脊骨处用刀片开,去掉梁骨。
  • 4.取下的两片鱼肉每隔2厘米斜着剔一刀。
  • 5.剔好的鱼肉放入料酒,少许食盐、蛋清、葱姜抓均腌制10分钟。
  • 6.腌渍好的鲈鱼拍上薄薄的一层淀粉
  • 7.拍好淀粉的鲈鱼放入七成热的油锅中炸制。
  • 8.炸制金黄色(要炸透)外皮稍稍有些焦时捞出。
  • 9.锅中留底油,放入葱姜蒜爆香。
  • 10.放入炸好的鲈鱼、青豆.。
  • 11.加入少许白糖、烹入料酒、醋、生抽。
  • 12.快速颠翻均匀即可。
  • 13.外焦肉嫩,有独特的醋香。
