  • 转化糖浆47g

  • 中筋面粉68g

Steps to make 蔓越梅椰蓉月饼

  • 1.黄油加糖打发,分次加入蛋液,加入低粉、郴蓉、蔓越莓拌匀,入冰箱冷藏半小时
  • 2.将馅平均分成9等份
  • 3.将转化糖浆、枧水、植物油充分混匀,筛入中筋面粉,和成团,醒1小时
  • 4.将面皮平均分成9等份,搓圆
  • 5.将面皮压平包入馅料,轻轻的用虎口往上推至完全包住,搓圆后入50g模具,压平扣出,依次做好后表面刷一层水,放置5分钟,这时先200度预热烤箱。将月饼放入烤箱200烤5分钟,定型后剧一层蛋液再185度烤20份钟
