Steps to make 酱香大骨头

  • 1.大骨头及配菜清洗干净备用。
  • 2.大骨头冷水入锅放几片姜,两颗香葱,加入料酒去腥,沸腾后撇去浮沫焯水5分钟左右捞出。
  • 3.把葱切小段姜切片,起锅烧油先放入葱姜翻炒煸香后在放入八角、桂皮、香叶、辣椒翻炒,加入酱油。
  • 4.加入豆瓣酱。
  • 5.翻炒均匀,炒出香味。
  • 6.加入三四碗水煮至沸腾,炖大骨头的汤水就做好了。
  • 7.焯好水的大骨头放入砂锅里,倒入汤水没过大骨头,小火慢炖至肉软烂。
  • 8.最后放入盐和切成滚刀块的土豆,煮至断生出锅撒香葱段即可。
