新平酸菜鱼
新平是云南彝族、傣族自治县,县境内有彝族、傣族、哈尼族、拉祜族、回族、白族、苗族、汉族等17种民族,其民族风俗独异,特色风味美食诱人 。新平傣族因用长丈余特制的彩织绵带缠绕成宽约一尺多花腰系住筒裙而被俗称花腰傣。

新平腌菜,在云南很有名,昆明几乎每个菜市场都会有卖新平腌菜的摊子。周末的时候去东寺街,那里最近变成了年货街,卖吃的非常多,看到有卖新平腌菜,看着就好吃!

买了点回家做酸菜鱼。正宗的四川酸菜鱼用的是泡菜,我用的是腌菜,配料是家里放的一些剩的菜,得赶紧吃了,所以一并煮进去了。

Steps to make 新平酸菜鱼

  • 1.草鱼1条。
  • 2.新鲜腌菜3公两。
  • 3.配菜:豆腐、蕃茄、土豆、胡萝卜。
  • 4.配料:香葱香菜。
  • 5.配料:姜、标、小米辣。
  • 6.腌菜切块放入油锅里炒熟。
  • 7.炒熟的腌菜锅里放入水。
  • 8.放入鱼块。
  • 9.再放上配菜,煮大约5分钟。
  • 10.起锅打进汤盆。
  • 11.上面铺上香葱香菜和小米辣。
  • 12.再撒上火烧辣椒和蘸水辣椒、芝麻、花椒。
  • 13.炒锅里再烧一份油,淋在上面,炝出香味。
  • 14.可以吃了!
