蜜汁叉烧肉
叉烧肉是粤菜中极具代表性一道菜。叉烧肉为烧烤肉的一种,系指经兽医检验合格的猪肉、禽肉类,加入酱油、盐、糖、酒等调味料,经过腌制后插在特制的叉子上经电或木炭烧烤而成的一种熟肉制品,是广东烧味的一种。多呈红色,瘦肉做成,略甜。自从这次寻味之旅回来,我家小吃货的要求不断,这不要吃叉烧肉了!采购好材料,我就开始腌制叉烧了,这次还在腌料里加了点红糟!红糟一直是中国江南人士调制红糟肉、红糟鳗、红糟鸡、苏式酱鸭、红糟蛋及红糟泡菜等食品的原料,含酒量在20%左右,质量以隔年陈糟,色泽鲜红,具有浓郁的酒香味为佳。它具有降低胆固醇、降血压、降血糖及防癌等特殊功能,更有难能可贵的天然红色素,是珍贵的美味健康天然食品

  • 叉烧酱50克
  • 蚝油2勺
  • 红曲酒糟20克
  • 少许
  • 蒜末少许
  • 姜汁半勺
  • 生抽2勺

Steps to make 蜜汁叉烧肉

  • 1.买的梅肉洗净
  • 2.用厨房纸巾吸干水分,放入适量红曲酒糟、盐、姜汁、生抽、叉烧酱、蚝油、蜂蜜、蒜末
  • 3.搅拌均匀,最好用手多按摩一会,还用竹签在猪肉上戳了一会以便更好入味
  • 4.然后放入保鲜袋入冰箱冷藏24小时
  • 5.取出腌制好的猪肉放在烤架上,刷上用蜂蜜和水兑成的蜂蜜水
  • 6.放入烤箱200度先烤20分钟
  • 7.取出翻面再刷一次蜂蜜水,再入烤箱烤20分钟
  • 8.烤制完成,取出放入碗里
  • 9.等到不烫手时,切片即可
  • 10.开吃
