京酱肉丝,是传统北京风味菜。选用猪里脊肉为主料,辅以北京“六必居”特产黄酱、甜面酱及其它调味品,用北方特有烹调技法“六爆”之一的“酱爆”烹制而成。

  • 1.里脊肉改刀切丝,加料酒,酱油,黄酱,姜丝,蛋清抓匀腌制15分钟
  • 2.葱改刀切丝,铺在盘中备用
  • 3.起锅做油,油八成热,将肉丝下锅翻炒,加鸡精,适量盐翻炒
  • 4.点适量香油,出锅装盘
