巧克力奶油蛋糕
主料:大鸡蛋2个、低粉35g、牛奶35g、色拉油22g、细砂糖30g
辅料:可可粉5克、Baileys甜酒20ML、柠檬汁1克

Steps to make 巧克力奶油蛋糕

  • 1.蛋清和蛋黄分离后,细砂糖加入蛋黄中搅打均匀;加入油,搅打至乳化;
  • 2.加入牛奶,轻轻搅匀;
  • 3.低粉与可可粉混合,筛入蛋黄中;快速往同一方向搅打成圈;
  • 4.加百利酒(或咖啡酒)搅匀;
  • 5.先低速打发一些鱼眼泡,加入细砂糖及柠檬汁,拿盆侧着打发;
  • 6.再加一次糖,打蛋器开3档搅打至泡泡呈肥皂泡沫般,开到5档,继续搅打至至干性泡发。
  • 7.取1/3的蛋白霜至蛋黄糊中,翻拌均匀;
  • 8.倒入蛋白容器里,同样用切、拌的方式拌匀。
  • 9.混合均匀后填入蛋糕模内,装8分满(可装入裱花袋挤入杯中);端起烤盘,离桌面较近的距离震多几下。再用刮刀把气泡搅搅。
  • 10.烤箱预热160度,烤25分钟左右。出炉后把烤盘拿出来震几下(面包、小蛋糕都这样)。取出蛋糕待凉后再裱花。
  • 11.100克淡奶油加10克糖
  • 12.低速打发出现纹路,再打多一会,达到8分多状态。(夏天隔冰水打发)
  • 13.用的玫瑰嘴和8齿花嘴
  • 14.奶油装入裱花袋,在蛋糕上挤出不同的花纹。
